How we started

After honeymooning in Italy, visiting Napa and Sonoma counties, and traveling to wineries in the United States and Europe, John and Jill Matthews decided grape-growing and wine making were in their future.

Jill and John both began their careers as Dallas police officers. After leaving the department, John continued to hone his public safety career, developing federal law enforcement initiatives, appearing as a regular CNN and Fox News analyst, and serving as a White House Adviser.  Jill left to focus on raising the family and serving her community on the boards of a variety of youth and school-oriented organizations, including the MISD Education Foundation and the Midlothian Amateur Baseball Association.

With the founding of Cassaro Winery and Vineyards, the couple has committed to making Texas wines and bringing an Italian tasting experience to North Texas.


While grapes may be the key ingredient in wine, passion is the key characteristic of winemakers. Passion to grow the best grapes, passion to make the best wine, and passion to share the fruits of one’s labor with family and friends.


“Great wine is made in the vineyard” is an Italian saying that has held true for centuries. Growing European varietals, Cassaro Winery and Vineyards prides itself on producing the finest grapes and utilizing old world techniques to make the best Texas Wines.

Our Timeline


Planted first vines

After a trip to Napa and Sonoma counties and visiting numerous wineries, John and Jill return to North Texas and plant ten experimental grapevines.



Vineyard Expansion

From less than a dozen vines, the vineyard expands to over 1,000 vines and features Sangiovese from Italy, Tempranillo from Spain, and Albarino from Portugal.



Purchase of 1910 Farmhouse and Property

In 2018, the Matthews family doubled the size of their vineyard and purchased a 1910 farmhouse in historic downtown Ovilla, planning to build a tasting room and winery. Cassaro Winery and Vineyards, LLC was issued its winery license and renovations commenced on converting the house and its creek-lined property into a destination for wine lovers.
